This Colombian coffee is processed at Peñas Blancas, a central washing station in Huila established by Nestor Lasso and Jhaon Vergara. The project gives surrounding farmers access to specialised processing facilities, helping their coffees reach the quality and recognition needed to earn better prices. This selection brings together Caturra and Castillo varieties, with washed processing chosen for a clear expression of their character.
Spilt Milk uses a light roast to highlight orange marmalade sweetness, crisp apple and a delicate oolong tea finish. The result is a bright, approachable coffee with a juicy texture and a clean balance between sweetness and acidity. It suits everyday filter brewing as well as a more vibrant style of espresso. For filter, the roaster suggests starting with 20g coffee to 320ml water.
