China Yuan Yi Yuan comes from Lilo Coffee Roasters, sourced from the Yuan Yi Yuan Coffee Farm in DeHong, Yunnan, China, at 1,400–1,580 MASL. This is Lilo's fourth year working with this standout Catimor P4 lot — and the quality keeps improving. Produced in collaboration with the Dehong Tropical Crop Research Institute, the process is uniquely inventive: after depulping, the removed coffee pulp is placed back into a water-filled tank alongside the mucilage-covered parchment, combined with a coffee-specific yeast and fermented for 150 hours before drying. The result is a lusciously fruit-forward yet refined cup with white peach and lychee sweetness, tropical pineapple, and a refreshing jasmine tea finish with lingering hints of syrup and white wine.
