Kolumbien El Paraíso Pink Bourbon comes from Kaffeelix, produced by the award-winning Diego Samuel Bermudez at Finca El Paraíso in El Tambo, Cauca, Colombia, grown at 1,850–2,000 MASL. This wildly complex Pink Bourbon undergoes a legendary double anaerobic process: a first 48-hour whole-cherry fermentation, followed by a 36-hour anaerobic fermentation with specially cultivated tropical yeasts under pressure. A thermal shock wash at 70°C halts fermentation at a precise point, locking in the coffee's vivid aromatic precursors. The result is an intensely tropical and fruit-forward cup bursting with wild strawberry, fruit punch, and rosehip, rounded out by a long, silky vanilla finish.
