Kaffeelix White Honey Gesha comes from Sebastian Ramirez, a fourth-generation coffee producer at El Placer farm in Quindío, Colombia, grown at 1,650–2,000 MASL. Sebastian is celebrated for his innovative processing methods, and this lot is a testament to that precision. Cherries are anaerobically fermented for 48 hours at a constant 18°C, followed by canopy drying, a 48-hour immersion in oxygenated water, and a carefully controlled two-part final drying phase. The result is a complex, refined cup with delicate floral aromatics, lemongrass, herbs, grape, and melon, rounded out by a silky, tea-like body.
