Finca Los Cedros Sidra Natural is an expressive Colombian coffee from Bruselas, Pitalito, Huila, produced by Oswaldo Toro at 1800 metres above sea level. After years of learning from the Lasso family and working with the Finca El Diviso production team, Oswaldo has developed Los Cedros into a specialty coffee project focused on selective harvesting, controlled fermentation, and thoughtful post-harvest practices. This Sidra lot undergoes a highly intricate Mosto Natural process, beginning with flotation and careful manual selection of ripe cherries. The coffee then moves through controlled oxidation, anaerobic fermentation, and submerged fermentation using mosto before a thermal shock and cold-water rinse help preserve its aromatic compounds. Slow drying in a controlled, hermetically sealed environment further protects the coffee’s delicate characteristics. The result is a vibrant and aromatic cup with notes of rose, hibiscus, cherry, and dried raspberry, making it an exciting choice for filter brewing.
