El Paraiso Geisha Washed is a refined and highly expressive Colombian coffee from Finca El Paraíso in Cauca, produced by Daniel Bermudez and his family at an elevation of 1960 metres. The family-run farm has become renowned for innovative processing techniques, combining microbiology research and advanced fermentation methods to highlight the unique characteristics of each coffee. For this lot, only fully ripe Geisha cherries are hand-selected before undergoing ozone disinfection and immediate depulping. The coffee is then fermented anaerobically for 24–36 hours with Lactobacillus inoculation to enhance sweetness and smoothness, followed by a double thermal wash using hot water at 48°C and a cold-water shock at 4°C. Controlled drying completes the process. With aromas of yuzu and jasmine, the cup delivers elegant flavours of jasmine, grapefruit, rose, and green tea. Best enjoyed as a filter coffee.
