Typica Anaerobic Natural Pillcocaja is an expressive Ecuadorian coffee produced by Ana Crespo at Pillcocaja Coffee in Azuay, Ecuador, at an elevation of 1,650–1,700 metres. Made from the classic Typica variety, this anaerobic natural coffee delivers a vibrant and fruit-forward cup with notes of pomegranate, plum, and grapefruit. The combination of anaerobic fermentation and natural processing enhances the coffee’s intense fruit character while adding depth and complexity. Bright citrus acidity, rich plum sweetness, and juicy pomegranate flavours come together to create a distinctive and lively coffee that showcases the unique potential of Ecuadorian specialty coffee.
