Big Sur Coffee

Big Sur Coffee Roaster was established in Shanghai, China, in 2016. Its approach starts with buying coffee from farm owners and selecting lots for the character of their origin and variety. The emphasis is on understanding the green coffee before deciding how to roast it.

The Shanghai roastery uses two Loring machines for different purposes: an S35 for espresso and an S7 for filter coffee. Keeping those roasting programmes distinct allows the team to develop profiles around the demands of each preparation method.

Big Sur’s selection places individual lots and their production details at the centre of the experience. For filter coffee, that means attention to aromatic definition; for espresso, development must also consider concentration and texture. Its combination of farm-level sourcing and separate brewing profiles offers a specific perspective on China’s specialty coffee scene.
