Subtext Coffee Roasters

Subtext Coffee Roasters was founded in Toronto, Canada, in 2020 by Alex Castellani and the team behind Boxcar Social. Their experience serving coffees from different roasters led to a focused project of their own: single-origin coffee with a clear account of where it comes from and how it was produced.

Subtext specialises in light roasting and does not blend coffees or replace farm identities with invented product names. Its approach is intended to preserve distinctions between producers, varieties and harvests, with sweetness and clarity guiding the roast.

Green coffee is purchased through both direct relationships and specialist importers, rather than one purchasing model alone. The team combines blind tasting with measurements such as moisture, density, roast colour and solubility. That combination of traceability and technical scrutiny makes Subtext particularly interesting for drinkers who want to compare the character of individual coffees.
