Ethica Coffee Roasters

Ethica Coffee Roasters was founded in Toronto, Canada, in 2019 by Gregory Koifman. Born in Russia and raised in Israel, Koifman worked on food and beverage projects before a visit to a specialty café in Florida helped redirect his attention towards coffee.

The name refers to philosopher Baruch Spinoza’s Ethics, reflecting Koifman’s interest in the relationship between thought and everyday practice. Ethica developed a café on Sterling Road and a separate roasting operation, alongside opportunities for customers to learn through tastings and coffee education.

The coffee programme focuses on individual origins and the qualities of the green coffee, using lighter roasting to keep those distinctions clear. Information about producers, varieties and processing gives context to the selection. Ethica brings a considered, exploratory approach to Toronto coffee, with education woven into the experience of tasting different lots.
