Tim Wendelboe Coffee
Tim Wendelboe opened his coffee bar and roastery in Oslo, Norway, in 2007. Before establishing the business, he won the 2004 World Barista Championship and the 2005 World Cup Tasters Championship. Those two disciplines, preparation and sensory evaluation, remain closely connected in his work.
The roastery is associated with light Nordic roasting that preserves the individual character of a coffee. Its approach relies on carefully selected green beans and repeated evaluation, with the aim of expressing sweetness, acidity and origin clearly in both filter coffee and espresso.
Long-term producer relationships are central to the selection. Work with farms such as Finca El Puente in Honduras extends to discussions and experiments around coffee quality. Wendelboe also operates Finca El Suelo in Huila, Colombia, giving him direct experience of cultivation. That involvement at farm level adds substance to a roasting philosophy built around the raw ingredient.
