Boo Coffee Roasters was founded in Anderlecht, Brussels, Belgium, in 2024 by Benjamin Brassart and Benoit. They met in a Brussels café in 2022 and developed the idea for their own roastery the following year. Benjamin moved from advertising and hospitality into coffee, while Benoit brought an accounting background and experience gained through travel.

The young roastery already has notable competition credentials. Benjamin won the 2025 Belgian Coffee Roasting Championship and became World Coffee Roasting Champion in 2026. Benoit won the 2024 Belgian AeroPress Championship.

Boo selects small lots through relationships with producers and importers, paying attention to both cup quality and how the coffee is traded. Its roasting is developed around the character of each lot and its use in filter or espresso. The founders’ different professional backgrounds meet in a business grounded in tasting, careful selection and practical brewing experience.
