Hydrangea Coffee Roasters is based in Berkeley, California, United States, and was founded by Bill Li and Shuxin. Li came to roasting from software engineering, developing his interest through home roasting before building a commercial coffee business.

The selection is particularly associated with fruit-forward coffees, unusual varieties and experimental processing. Co-fermented lots sit alongside washed coffees, so the range is not limited to one method. Producer and processing details are important here because the source of a distinctive flavour may lie as much in fermentation as in variety or origin.

Hydrangea’s lighter roasting aims to keep those differences apparent in the cup.
