MAME Coffee Roasters

MAME was founded in Zürich, Switzerland, in 2016 by Emi Fukahori and Mathieu Theis. Originally from Japan and France respectively, both left corporate careers to work in coffee. They began roasting their own coffees in 2020, extending the attention to flavour developed in their cafés.

Fukahori became World Brewers Cup Champion in 2018. Theis placed third at the 2018 World Barista Championship and sixth in 2019. Their complementary experience in filter brewing and espresso helps explain why preparation is central to the MAME approach.

The selection starts with the distinctive sensory qualities of green coffee. MAME develops coffees for espresso and filter, spanning familiar chocolate-led profiles and brighter, more unusual flavours. Detailed brewing guidance connects the roasting work to the drinker’s cup, while the founders’ competition experience supports a precise understanding of extraction, balance and how to present an individual coffee.
