This washed selection comes from Ayla Shantawene in Ethiopia’s Sidamo region, where roughly 725 smallholder families deliver cherries to the station. Testi Coffee operates the facility and invests in community initiatives such as primary schools and infrastructure. Careful cherry selection and the region’s diverse indigenous varieties provide the foundation for a coffee with clear fruit character and delicate aromatics.
Roasted light for filter brewing, the coffee combines pineapple and white peach with a sweet lime-like finish that inspired the roaster’s margarita tasting note. Washed processing emphasises clarity, making the tropical fruit and lively acidity especially distinct. This is a refreshing counterpart to the natural Ayla Shantawene, favouring a crisp, expressive cup over the natural lot’s richer berry and chocolate character. Supplied as 250g of whole beans.
