Ipê is a Yellow Catuai lot from the Barbosa family’s Fazenda Joia Rara in Brazil’s Cerrado Mineiro region. Selected by Spilt Milk through Orange Brown Imports, this coffee shows a more adventurous side of Brazilian coffee, pairing a lively fruit character with a clean, sweet finish. It is roasted light to keep that brightness at the centre of the cup.
The whole cherries undergo 96 hours of fermentation in sealed GrainPro bags before further processing and patio drying. This anaerobic natural approach develops an expressive profile of passion fruit, green apple and gummy-bear sweetness. The initial fermented character gives way to a juicy, balanced finish. Spilt Milk recommends filter brewing at a starting ratio of 20g coffee to 320ml water.
