
Rogue Wave Coffee - Brazil - Rio Brilhante Icatu - Natural

This natural Icatu comes from Fazenda Rio Brilhante in Pântano, Minas Gerais, at 900–1,150 metres. Founded by Inácio Urban, the farm grew from an initial 20 hectares of coffee into a family operation with separately managed growing sections and protective tree plantings. Its harvesting and density-sorting practices help distinguish lots for further processing and drying.
Icatu was developed in Brazil through crosses and repeated backcrossing with Arabica, combining productive, resilient plants with improved cup quality. In this 2026 harvest, Rogue Wave finds almond and chocolate balanced by pear and tangerine. The coffee suits espresso and filter, with suggested starting points of a 1:15–16 filter ratio at 91°C or a 1:2.4 espresso ratio at 92°C in 27–30 seconds. Allow two to three weeks of rest after roasting.
