Yilver Pajoy is an award-winning washed Gesha from Finca El Arrayan in Huila, Colombia, produced by Yilver Andres Pajoy Ipia at 1,860 metres. Placing 5th in the Western Division of Copa de Oro ’25, this competition microlot showcases an elegant and refined expression of the Gesha variety. As an espresso, it delivers delicate yellow plum and fig notes alongside the fragrant character of Earl Grey. A vibrant yet rounded mouthfeel and refined sweetness create a beautifully balanced shot with a lingering finish, making this a distinctive coffee for espresso lovers.
