For over 20 years, Alexander Vargas has refined his craft at La Piragua in Huila, Colombia starting at just 15 years old and moving into specialty coffee by 20. His dedication has earned him multiple national Cup of Excellence nominations, and he built his own coffee laboratory on the farm to cup and classify every lot with precision. This Striped Red Bourbon microlot is a showcase of his expertise in controlled fermentation: cherries are anaerobically fermented for 60 hours in airtight barrels, then dried for 18 days in specialized sheds. The result is a complex, vibrant cup with a rich sweetness reminiscent of fruit drops, layered with bright raspberry and deep notes of red currant and peach.
