Ce lot Innovation est produit par Nestor Lasso à Pitalito, dans le Huila, en Colombie, à 1 850 mètres d’altitude. Issu de variétés éthiopiennes Landrace, il reflète plusieurs années d’expérimentation sur la fermentation et le traitement du café.
Le procédé lavé comprend une fermentation anaérobie, un lavage par choc thermique et un séchage contrôlé. La tasse est florale, vive et équilibrée, avec de délicates notes de rose et de litchi, accompagnées de la douceur juteuse de la pêche. Une finale nette et élégante complète l’ensemble.

The rose and lychee really pop through but I noticed a tannin feel in my mouth afterwards definitely gets better as it cools down. It may be the I brewed it in my hario switch, or the roast style of demello. First time trying this brand. Not first time having Nestor lasso (my favourite) next to frank toress
