When you buy coffee, you often see terms like light, medium, or dark roast.
But what do these terms really mean — and more importantly, how do they influence the taste in your cup?

What is coffee roasting?

Roasting is when coffee comes to life.
Green beans are heated between 180°C and 240°C until they reach the desired color, aromas, and texture.

During this process:

  • The beans lose moisture and expand.
  • Natural sugars caramelize, bringing sweetness and complexity.
  • Acidity decreases as the roast darkens.
  • Aromatic oils rise to the surface, releasing that captivating scent.

It's a clever blend of art and science, with each roaster adjusting temperature, time, and airflow to bring out the best in each origin.

Light roast: lively, fruity, and elegant 

Color: light brown
Internal temperature: around 195 °C
Stage: stopped shortly after the first crack

Light roasts retain the original taste of the bean, the terroir, and the varietal.
They offer vibrant acidity, floral or fruity aromas, and a light body.

Typical notes: lemon, red berries, jasmine, honey, apple.

Recommended methods:

  • Pour-over (V60, Chemex)
  • Aeropress
  • Drip coffee

Ideal for those seeking delicate, bright, and aromatic coffees, perfect for discovering terroir nuances.

Medium roast: balanced and sweet 

Color: medium brown
Internal temperature: around 210 °C
Stage: between the first and second crack

Medium roast offers a perfect balance between acidity, sweetness, and body.
It reveals caramelized, chocolatey, and slightly fruity flavors.

Typical notes: milk chocolate, brown sugar, hazelnut, red berries.

Recommended methods:

  • Pour-over
  • Espresso
  • French press

This is the most versatile and popular roast: accessible to all palates, neither too mild nor too intense.

Dark roast: intense, full-bodied, and smoky

Color: dark brown, slightly oily appearance
Internal temperature: around 225 °C
Stage: after the second crack

Dark roasts offer a pleasant bitterness, low acidity, and a dense body.

The bean’s original characteristics fade in favor of toasted and caramelized flavors.

Typical notes: dark cocoa, molasses, burnt caramel, toasted nuts, spices.

Recommended methods:

  • Espresso
  • Moka pot
  • French press

Perfect for lovers of full-bodied and powerful coffees with a more “classic” profile.

⚙️ Different roasting techniques

Roasters use several methods, depending on the desired outcome:

  1. Drum roasting – the most common: beans tumble in a heated drum, ensuring even roasting.
  1. Hot air roasting (fluid bed) – a stream of hot air quickly roasts the beans, enhancing clarity and vibrancy.
  1. Hybrid roasting – combines drum and airflow for optimal control (used by many modern roasters).
  1. Profile roasting – a digital method where every variable (temperature, time, rate of rise) is monitored to reproduce the exact same result.

Each technique influences the aromas, sweetness, and texture of the final coffee.

Did you know?

  • The same green coffee can have totally different tastes depending on the degree of roast.
  • Light roasts contain slightly more caffeine (by volume) because the beans are denser.
  • The Maillard reaction, the same one found in toasted bread, is responsible for the brown and toasted aromas of coffee.
  • Specialty roasters often test several profiles before choosing the one that best highlights the terroir.
