HATCH - Starlight

Tasting notes: Floral, Stonefruit, Citrus

Starlight is Hatch's lively and expressive Foundation coffee, designed to showcase origin character through a modern, light-medium roast. The current iteration comes from Ethiopia's Duromina Washing Station and is fully washed, producing a clean and vibrant cup with delicate florals, juicy stone fruit and crisp citrus.

Roasted for clarity rather than heavy development, Starlight works beautifully as both filter coffee and modern espresso. Hatch recommends opening up the espresso ratio to highlight its sweetness, brightness and aromatic complexity.

Hatch treats Starlight as a single-origin expression rather than a fixed blend. Its current Duromina component is washed, with a light-medium roast that keeps the floral and citrus character clear.

For espresso, Hatch starts with 18g in and 43–45g out at 93°C, with a shot time of about 23–28 seconds. The longer ratio is intended to open up the fruit and sweetness; adjust it to suit your grinder and water.
