In 2022, a fundraising initiative supported the construction of a new wet mill on Negussie’s farm. The mill was completed in October 2023 and began operating during the early harvest period.

Being present at the start of harvest allowed close observation of the mill’s first processed lots and the identification of potential risks. This early involvement contributed to establishing clear processing standards to ensure consistency and quality.

Daily pickings are separated individually, dried under shade nets, and stored in airtight GrainPro bags after drying, with each lot carefully marked for traceability.

A defined processing protocol was established, focusing on controlled fermentation and the implementation of a soaking stage after mechanical mucilage removal, supporting clean and stable cup results.
