SEPTEMBER - Faver Ninco - Colombia - Washed Pink Bourbon

Tasting notes: Pink Lemonade, Raspberry, Floral

This is September’s first harvest from Faver Ninco and his family at Finca Costa Rica in Santa María, Huila. Their Pink Bourbon grows at 1,900 metres, where the variety’s bright sweetness and pronounced floral character are clearly expressed. The lot is picked by hand at full ripeness before its carefully staged washed process begins.

Whole cherries first ferment for 24 to 30 hours. After depulping, the coffee undergoes a second anaerobic fermentation for 60 to 80 hours, then is washed once while retaining a thin layer of mucilage to enhance body and fruit character. The cup is vivid and defined, with pink lemonade, fresh raspberry, delicate white florals, crisp citric acidity, and a light, floral finish.
