Tasting notes: Berries, Praline, Baker's Chocolate

This Foundation coffee comes entirely from Brazil and uses natural processing. Hatch roasts it to a medium level, bringing forward a rounded sweetness that moves from berries to praline and baker’s chocolate.

It is designed to be easy to enjoy across brewing styles: espresso, V60 and batch brewing are all part of Hatch’s recommendation, and the chocolate character remains present in milk. The roaster’s espresso starting point is 18g in, 34–36g out, at 93°C in roughly 23–28 seconds. Use that as a starting point and adjust for your setup.
