HATCH - Gamma

Tasting notes: Floral, Citrus, Caramel, Dark Chocolate

Gamma is Hatch’s modern interpretation of a traditional espresso blend. Its current combination brings together a Guatemalan base, which supplies caramel, dark chocolate and structure, with an Ethiopian component that contributes floral lift and crisp citrus.

A medium roast keeps the cup sweet and balanced while giving the chocolate foundation enough presence for espresso. The blend is also intended for filter brewing, where its floral and citrus notes provide a lighter counterpoint to the caramel sweetness.

For espresso, Hatch starts with 18g in and 35–37g out at 93°C, with a shot time around 23–28 seconds. This is a starting point rather than a fixed rule: adjust the grind and ratio around the sweetness as your water and equipment require.
