The Barn - Ivan Dos Santos Typica

Tasting notes: Plum, Vanilla

Ivan and Rose dos Santos produce this distinctive Typica microlot at Sitio Seriema in São Paulo, Brazil. Known locally as Sumatra, the variety gives a refined expression of ripe plum and sweet cherry, supported by soft vanilla, gentle acidity, and a long finish of chocolate and caramel. The result is a balanced Brazilian coffee that performs beautifully as either filter or espresso.

Only ripe cherries are hand-picked before being naturally processed and slowly dried as whole fruit on raised African beds. Ivan and Rose have worked with Fazenda Ambiental Fortaleza since 2008 to improve quality and sustainability across their farm and community. Their long relationship with The Barn has also supported better water-treatment systems, helping protect local resources while the slow drying process develops the coffee’s sweetness and depth.
