The Barn - El Vergel Guava Banana

Tasting notes: Guava, Mango

Guava Banana is produced by Elias and Shady Bayter at El Vergel in Tolima, Colombia. The family began planting coffee in 2012 on the fertile slopes of the Nevado del Ruiz volcano. This lot uses Red and Yellow Caturra grown at 1,450 metres and undergoes 48 to 60 hours of anaerobic fermentation.

The cup is intensely fruity, led by guava, ripe mango, and strawberry, with dark chocolate and cola adding depth. After fermentation, the cherries are slowly dried on covered raised beds, finished at low temperature, and rested in GrainPro for 45 days to stabilize the coffee and preserve its sweetness, clarity, and balance.
