Nahun Fernandez is a producer in the Las Flores community of Santa Barbara, Honduras, and has worked with Proud Mary since 2012. Originally focused on traditional varieties and washed processing, he has developed his processing expertise while sharing techniques with neighbouring growers.

A natural-process experiment with Proud Mary in 2016 began with a single bag and helped expand local interest in the method. This natural Parainema carries blackberry, red apple and plum notes. Proud Mary recommends both espresso and filter brewing, making it a fruit-forward option across the two methods.
