Tasting notes: Caramel, Melon, Red Currant

Finca El Ángel is the sixth farm in the Silva family’s operation on El Salvador’s Santa Ana volcano. Established by the Mathies family in 2018, it became part of the Silva operation in December 2022 after Rafael Silva Jr. had worked with its coffees at the family mill. Proud Mary’s relationship with the Silva family dates to 2015.

Rafa continues to renovate El Ángel while maintaining its coffee production. The farm grows Red and Orange Bourbon, Pacamara, SL28 and Geisha; this particular offering is the washed Bourbon lot. Its cup brings together caramel sweetness, melon and red currant, giving a sweet, fruit-accented profile that Proud Mary recommends for either espresso or filter preparation.
