Huila lies in southwestern Colombia between the Andes’ Central and Eastern ranges, with the Magdalena Valley running through the middle. Its changing elevations create varied growing conditions, and small farms define the region: Proud Mary notes that 80 percent of Huila’s coffee producers cultivate fewer than three hectares.

This washed Castillo and Caturra coffee is decaffeinated with natural ethyl acetate, an ester found in bananas and fermented sugarcane. The process removes caffeine from green coffee while preserving much of its original character and adding fruity complexity. The cup combines milk chocolate, mandarin orange, stone fruit and malt with soft acidity and a long finish.
