This naturally processed Pacamara comes from Carlos Pola's Finca Las Brisas and Finca San Antonio in El Salvador's Apaneca-Ilamatepec range. Mango, plum, and cranberry create a juicy, expressive cup that balances tropical sweetness with the brightness of red fruit and a long, structured finish.

Carlos purchased Las Brisas in 1997 and committed to coffee full time in 2012, applying his textile-industry experience to quality control and traceability. His farms also focus on sustainability and producer education. For this lot, ripe cherries dry whole on raised beds for 15 to 20 days, with frequent turning to maintain even drying and clarity.
