This Decaf Castillo benefits from a shorter resting period of just 5–7 days after roast due to its Thermal Shock Washed and EA Decaf processing methods.
The coffee undergoes a semi-washed culturing stage using Saccharomyces cerevisiae before being decaffeinated with sugarcane-derived ethyl acetate. This careful process helps preserve the coffee’s natural complexity and delicate fruit character.
In the cup, expect a clean and vibrant profile with notes of raspberry, peach, and key lime, supported by a medium body and bright, lively acidity.
We chose this decaf for its exceptional clarity, sweetness, and its ability to retain a beautifully expressive flavor profile even after decaffeination.
