Los Nogales Mucilage EA Decaf is an experimental Colombian release with notes of raspberry, cotton candy and vanilla. The lot was featured by 2024 US Brewers Cup champion Weihong Zhang and reflects a processing approach that challenges conventional expectations of decaffeinated coffee.

Los Nogales is associated with the Hernández family in El Diamante, near Bruselas in Colombia. This particular Caturra combines mucilage-focused preparation with ethyl acetate decaffeination, keeping the coffee’s fermentation treatment distinct from the caffeine-removal stage.

The original lot guidance notes that the roasted beans may look different from a conventionally prepared coffee. It also describes a particularly fast drawdown during brewing, making a finer grind a useful starting adjustment. Those practical characteristics are part of this specific experimental release.
