Hatch Coffee – La Neblina Sydra Washed – Peru
Tasting notes: Lavender, pineapple, vanilla and walnut
David Flores grows this Sydra at La Neblina in North Cajamarca, Peru, at 1,850–1,900 metres. Alongside his own farming, he leads El Morito, a network of more than 150 independent producers that combines autonomy in processing with shared export opportunities. His work at La Neblina is centred on continual improvement, with this 2025/26 harvest lot offering lavender, pineapple, vanilla and walnut.
Peak-ripe cherries are selected by hand and floated to remove defects before spending 36 hours in sealed containers for anaerobic fermentation. After pulping, a further 72-hour fermentation takes place in the shade. The coffee then dries for more than 30 days in multi-tiered solar greenhouses. This slow, staged preparation protects the delicate aromatics and develops the layered sweetness that makes the lot especially suited to filter brewing.
