HATCH - Hachi Colombia 'Amane'
Tasting notes: Jasmine, Hibiscus, Red Currant, Peach Candy
Hachi Amane combines Pink Bourbon cherries from Rubén Gomez’s El Peñon farm with the processing work developed by Diego Bermudez. The project brings coffee cultivation and controlled biotechnology together through collaboration between farms and a specialised processing team.
After pulping, the coffee is introduced to a fermentation must, or mosto, prepared from the juice and pulp of Geisha coffee that has undergone 48 hours of controlled fermentation. The medium carries aromatic precursors and fermentation products into the Pink Bourbon preparation.
The resulting Amane washed lot is recorded with notes of jasmine, hibiscus, red currant and peach candy. It remains a Pink Bourbon selection, despite the use of a Geisha-derived fermentation medium, and should be distinguished from Hachi’s separate Geisha releases.
