El Paraiso Sake is a limited-edition Colombian Geisha from Finca El Paraíso in Cauca, produced by Daniel Bermúdez at 1,960 metres above sea level. Known for its innovative processing, Finca El Paraíso uses a carefully controlled cold fermentation washed method followed by a thermal shock wash. Ripe cherries first undergo oxidation before being immersed in cold water, then pulped and fermented anaerobically with lactic acid bacteria. A thermal shock treatment and controlled dehumidifier drying help preserve the coffee’s delicate aromatic qualities. The result is an exceptionally expressive filter coffee with aromas of citronella and bergamot, followed by vibrant flavours of citronella, bergamot, tropical Hi-Chew, and honey. A previous 2023 batch won first place in the Innovation category at the Coffee Collection festival in Tokyo.
