El Paraiso Sake is a Geisha produced by Daniel Bermúdez at Finca El Paraíso in Cauca, Colombia. A batch from the 2023 spring season earned first place in the innovation category at the 2023 Coffee Collection festival in Tokyo.
The coffee undergoes controlled oxidation, cold-water immersion and anaerobic fermentation with lactic-acid bacteria before a hot-and-cold thermal-shock wash. Controlled drying preserves its citronella, bergamot, tropical-candy and honey character. Harvest: 2025.
