Hatch Coffee – El Paraiso Geisha Washed – Colombia
Tasting notes: Jasmine, grapefruit, rose and green tea
Daniel Bermúdez and his family produce this Geisha at Finca El Paraíso in Cauca, Colombia, at 1,960 metres. Their approach combines microbiology research and controlled fermentation with the farm’s thermal-shock washing method. From the 2025 harvest, this filter coffee presents yuzu and jasmine aromas, followed by jasmine, grapefruit, rose and green-tea flavours.
Fully ripe Geisha cherries are selected by hand and disinfected with ozone before immediate depulping. Fermentation takes place in sealed tanks for 24–36 hours with Lactobacillus inoculation. The coffee then receives a hot wash at 48°C and a cold-water shock at 4°C, followed by 30–40 hours of dehumidifier drying. This detailed preparation preserves the floral and citrus character that defines the lot.
