This Castillo decaf comes from Finca El Paraíso in Piendamó, Cauca, Colombia. Founded by Diego Bermúdez and managed on the ground by Daniel Bermúdez, the farm combines controlled fermentation with purpose-built microbiology and drying facilities.

The cherries undergo a two-stage yeast-assisted anaerobic washed process with thermal shock before sugarcane ethyl acetate decaffeination. The result retains a bright, sweet profile with raspberry and cinnamon aromatics and flavours of lemon, raspberry, cinnamon and honey. Harvest: 2025.
