Hachi Nagomi is a washed Geisha release from the project that combines Diego Bermudez’s processing methods with coffee from partner farms. The cherries for this lot come from Paraíso Farm in the hills of Tunía, Cauca, at approximately 1,950 metres.

The farm’s volcanic soils, drainage and cool conditions provide the growing context for its Geisha selections. Nagomi refers to harmony or peace of mind, a theme reflected in the recorded balance of floral aromatics, lemon, brown sugar and green tea.

The washed preparation follows pulping, fermentation, washing and drying under controlled conditions. Temperature, pH and fermentation duration are monitored, with native microorganisms or selected cultures used according to the processing objective. Thorough washing is followed by controlled drying to reduce moisture evenly.

This is the Geisha Nagomi lot, distinct from Hachi Amane’s Pink Bourbon and Geisha-derived fermentation medium. Hatch recommends filter brewing for this light-roasted 200g release, keeping the farm, variety and preparation at the centre of its identity.
