Hatch Coffee - Arauz Geisha Lot #1212 - Panama - Cold Room Natural (DRD)
Tasting notes: Floral, strawberry, blackberry jam, pear, maple syrup
Richard Arauz grows this Geisha at his family's Cotito farm in Chiriquí. Lot #1212 reflects the family's move toward specialty production and controlled processing.
Selected cherries ferment in a cold room, then dry slowly in a dark room with dehumidification. The cup combines floral aromas with berry preserves, pear and maple sweetness.
The family planted Geisha at the highest part of the Cotito farm before Richard took the project forward. For lot #1212, selected cherries spend an initial 48 hours in a cold room, followed by a further five to six days at 14–16°C. The final dark-room drying stage lasts about 18–20 days, giving this release its DRD designation.
