Mt. Ijen is a vast volcanic complex in East Java, where porous, mineral-rich soils and elevations of 1,100 to 1,500 metres support slow cherry development. Smallholders cultivate Komasti, Andungsari, Bourbon and Kartika side by side, bringing several layers of genetic character to the cup.

For this natural lot, ripe cherries are handpicked, sorted twice for density and colour, then dried slowly for 11 to 13 days in the cool mountain air. De Mello describes soft strawberry, tangerine-like acidity and a velvety body, while the listed tasting profile highlights strawberry, dark cherry and raisin.
