Datura Coffee - Alo 74158 Sky Project - Ethiopia - Whole Shade Dry Natural
Tasting notes: Fig, white grape, black tea, peach
Alo’s Sky Project comes from Tamiru Tadesse’s work in Bensa, Sidama, Ethiopia, at elevations of 2,450 to 2,500 metres. Alo Coffee was founded by Tamiru and his wife Messi, and the Sky Project is a collaboration with Tri-Up Coffee exploring cultivation at higher elevations in response to climate change. Cooler conditions allow the cherries to mature slowly.
This 74158 lot begins with handpicked cherries sorted by flotation. The selected cherries ferment in barrels with hot water for four days, with the process monitored to a final pH of 3.8. They are then dried whole in the shade, protected from overheating, and rested for at least 45 days before dry milling.
Datura’s tasting notes are fig, white grape, black tea and peach. The combination suggests an appealing balance of ripe fruit and tea-like character, distinct from Alo’s Mosto and Honey expressions. Sky Project offers a detailed look at how high-altitude farming, controlled fermentation and shaded drying come together in one Ethiopian coffee.
