Boo Coffee Roasters - Sipi - Uganda - Washed
Tasting notes: Blackcurrant, kumquat, cola gummies, black tea
Sipi comes from the slopes of Mount Elgon in Uganda, where Enimiro works with smallholder farmers growing coffee at 2,000–2,300 metres. Their cherries are delivered to Sipi Washing Station, part of The Coffee Gardens project. This lot, also named Obua, recognises Isaac Obua’s role in overseeing its processing.
Ripe cherries are pulped before a submerged fermentation lasting approximately 40–60 hours in cold mountain water. After washing and density grading, the coffee dries on raised beds. This careful washed process creates a clear, structured cup that allows the high-altitude fruit character to stand out.
Blackcurrant gives the cup depth, kumquat adds a lively citrus edge, and cola-gummy sweetness leads into a lingering black-tea finish. Boo presents Sipi as a filter coffee. Its V60 starting recipe uses 15g of coffee, 250g of water at 92°C and a total brew time around 2:15–2:30.
