This edition of Cloud Nine is a washed Geisha from Finca Buena Vista in Guatemala’s Antigua Valley. Managed by Luis Pedro Zelaya Aguirre since 1995, the farm sits between 1,500 and 1,890 metres. The Zelaya family has spent generations selecting seeds from its best-performing Geisha trees.

That patient selection brings greater consistency while retaining the variety’s floral character. Ripe cherries are depulped, fermented and washed at the farm’s wet mill, before the parchment dries on raised beds for up to 16 days. Boo sources this release through The Coffee Quest.

Peach sweetness and tangerine brightness lead into soft chamomile tea and a floral finish. The light roast and washed process suit a delicate pour-over. Boo recommends starting with 15g of coffee, 250g of water at 92°C and a medium-fine grind. Allow the cup to cool slightly to appreciate its floral detail.
