Boo Coffee Roasters - Boku - Ethiopia - Natural
Tasting notes: Sweet tea, peach, strawberry, green kiwi
Boku comes from Esayas Beriso’s farm in Hambela Wamena, in Ethiopia’s Oromia region. At 2,350 metres, he cultivates the JARC 74158 selection. His wife Meskerem manages harvest operations and cherry purchases, making coffee production a family undertaking.
Esayas works with SNAP Specialty Coffee, Boo’s Ethiopian export partner for this lot. The coffee is naturally processed: carefully selected cherries dry whole on raised beds, with regular turning and protection during the strongest sunlight and overnight. This handling brings fruit sweetness while retaining the coffee’s delicate aromatic character.
The cup opens with fragrant sweet tea, followed by peach, strawberry and a fresh green-kiwi finish. Boo offers Boku as a filter coffee. For a V60, use 15g of coffee and 250g of water at 92°C as a starting point, then adjust the grind for a balanced, gently fruit-led cup.
