The Rise of Specialty Coffee: Reading the Trends Clearly
Specialty coffee is attracting attention, but a useful trend story needs to explain what was measured. Consumer surveys, café openings and the appearance of unusual lots describe different things. None should automatically become a claim about every coffee drinker worldwide.
A concrete signal from the United States
The National Coffee Association’s Fall 2026 release reported that 48% of American adults had consumed specialty coffee in the previous day. The release was published on September 15, 2026 and describes research conducted in June. It is a US consumer measure, not a Canadian or global market share.
The NCA’s survey categories include several beverage types, such as espresso-based drinks and cold brew, alongside coffee described as premium. These consumer categories are not a laboratory assessment of the green beans or proof that every drink meets a professional quality criterion.
Growth does not tell you which bag to buy
A popular category can contain many flavours, prices and brewing styles. A latte drinker and a home filter enthusiast may both contribute to specialty consumption while seeking very different experiences.
For a shopper, the practical information remains the specific coffee: its origin, process, roast, brewing recommendation and price for the quantity. A large market forecast cannot replace those details.
Look for changes you can examine yourself
One useful development is more detailed product information. A named producer or clearly explained fermentation gives you something to compare. Another is the availability of different roast and decaf choices within a roaster’s range.
These are opportunities to explore, not evidence that every company follows the same practice. Claims about fair payment, environmental benefit or sourcing relationships still need specific support.
Keep discovery grounded in your own cup
Try one coffee close to your usual taste and one clear contrast. You might compare a familiar espresso blend with a single origin, or two differently processed coffees. Keep the preparation consistent enough to learn from the result.
Record what you would choose again. That is a more useful response to a trend than buying a bag simply because its variety or process is fashionable.
