
Even Coffee - Lost Origin x Las Margaritas #226

Lost Origin x Las Margaritas #226 is a Gesha from Finca Las Margaritas in Panama’s Chiriquí highlands, produced through a collaboration between Lost Origin Coffee Lab and Thibaut Paggen, EVEN’s Director of Coffee. The farm sits at 1,300 metres in the Volcán–Boquete region and is managed by the Navarro family. Cherries from the farm were transported to Lost Origin’s Panama City processing lab, where the coffee underwent a carefully controlled cold fermentation designed to enhance the natural fruit and floral character of the Gesha variety.
For Lot #226, whole cherries were cold-fermented for four days at 12.9°C with LOY-012 before being dried for 25 days in temperature- and humidity-controlled drying rooms with HEPA filtration. The low-temperature fermentation was designed to intensify the coffee’s fruit character without introducing the heavier fermented notes associated with warmer processing. In the cup, violet leads into vivid passion fruit and fresh mango, while bright citric acidity adds lift. A sweetness reminiscent of raspberry jam brings the profile together, resulting in a vibrant and highly aromatic expression of Panamanian Gesha.
