
Tanat - Nestor Lasso Ombligon - Colombia
Tasting notes: Strawberry, Raspberry, Peach Jam
Nestor Lasso Ombligon comes from Tanat Coffee, produced by the exceptionally talented Nestor Lasso at Finca El Diviso in Pitalito, Huila, Colombia, at over 1,750 MASL. The rare Ombligon — also known as Navel — variety undergoes one of the most intricate processes in Nestor's repertoire: cherries are harvested at full maturity before a long oxidation phase of 48 hours in open air, 12 hours of rest, then a further 60 hours with temperature control between 30–40°C. They then enter closed tanks for a 24-hour anaerobic fermentation with recirculation of the mosto, before a thermal shock at 60°C locks in the aromas. The coffee is then dried using a combination of sun exposure and dehumidification for 60–70 hours at 35°C until reaching ideal humidity. Roasted for filter, the result is an ultra-fruity, funky, and complex cup with strawberry, raspberry jam, and a delicate peach sweetness.
