
Mame - UBA Sakura
Tasting notes: Orange Blossom, Peach, Red Grape
UBA Sakura Omni comes from Mame Coffee Roasters, sourced from Finca Milán in Pereira, Risaralda, Colombia, at 1,500 MASL. The Sakura — Japanese for Cherry Blossom — process was originally developed by Julio Cesar Madrid alongside Mame's Mathieu Theis for the 2024 World Barista Championship in Busan, South Korea. Ripe Sidra cherries undergo a 48-hour oxidation before being transferred to a bioreactor, where they co-ferment with pineapple, peach, and native yeast cultures for 48 hours. Blackberry must and distilled oils are then added under nitrogen for a final 24-hour anaerobic stage, before the coffee is washed and sun-dried for 10 days. The result is a vibrant, fruit-layered cup with orange blossom aromatics, peach sweetness, and a juicy red grape finish. Equally expressive as espresso or filter.
